Coffee-rubbed sirloin steaks

One sniff of the new coffee rub from Orlando barbecue maestro John Rivers, proprietor and pit master of local favorite 4 Rivers Smokehouse, and the tangy scent of blended seasonings made me want to try it right away. As luck would have it, some friends were planning a cookout the day after I had gotten my hands on a jar of the rub, so I picked up some top sirloin steaks and salivated at the idea of lighting up the grill.

Following the instructions on the jar, I rubbed a generous portion of the seasoning onto the steaks about two hours before they hit the grill. As the meat cooked, the smell tantalized our taste buds, and I felt like I was getting exponentially hungrier by the minute. The first bite elicited a string of full-mouthed praise ("Wow," "Oh my gosh," "This is delicious" being just a few) as we tasted the subtle-but-undeniable spiced, dark-roast coffee flavor that the rub lent to the steaks.

The coffee rub is now available on the 4 Rivers website and at all three smokehouse locations in the Orlando area.
