This cocktail comes from bartender Zach Lynch at Ice Plant in St. Augustine. The refreshing blend of grapefruit juice and lemon pair beautifully with the citrusy profile in St. Augustine gin.

Makes 1 Cocktail

1 1/2 oz. St. Augustine gin
1 oz. grapefruit juice
1/2 oz. lemon
1/2 oz. Aperol
1/2 oz. simple syrup

Combine ingredients and shake with ice. Then strain over fresh ice, top with sparkling water and Peychaud’s bitters. Garnish with a nice thick grapefruit wedge.
