This cocktail comes from Beverage Director, Kurt Rogers at Sidecar in Jacksonville. Manifest’s crisp potato vodka gets a tropical infusion of pineapple from the Tepache, a slightly fermented pineapple drink commonly sold on the streets of Mexico. Any sweetness from the fruit is tempered with a blend of bitters, adding an intensifying herbal essence finished with a spicy bite.

Makes 1 Cocktail
Ingredients
1 1/2 oz. Manifest vodka
1 1/2 oz. Tepache
1/4 oz. fresh lime juice
Bar spoon Giffard Orgeat (French almond syrup)
1/2 bar spoon The Bitter Truth pimento dram
2 dashes Peychaud’s bitters
For the Tepache
To make the Tepache take the rind of the pineapple and half of the flesh and put into a jar or pitcher. Add 6 cups of water, one cup of raw sugar, 3 cloves and a stick of cinnamon. Cover with cheesecloth and set in your window sill for 3-4 days. Cool off any foam that forms on top and strain out the solids.
Instructions
Combine all ingredients and shake with ice. Double strain into a cocktail glass or coupe. Enjoy!
